Zucchini, Hasselback Pizzas
Serves 2 (add 1 zucchini for each additional person)
2 Medium Zucchini
1 Ball of Fresh Mozzarella Cheese or Sliced Mozzarella
1 Package Pepperoni or Turkey Pepperoni
Any & All of your additional favorite pizza toppings
1 Jar Cannizzaro Marinara, Mushroom Marinara, Vodka or Arrabbiata Sauce
Preheat oven to 400 degrees.
Place zucchini on cutting board and place a chopstick on either side of it. Slice in
1/4 inch slices just down to the chopstick (not slicing all the way through).
Place on a foil lined cookie sheet and stuff each slice with cheese and your favorite other toppings.
Bake at 400 degrees for 30 Minutes uncovered.
Serve on a plate over your favorite Cannizzaro sauce and drizzled on top along with a cup for dipping!
