Stuffed Banana Peppers – Hoagie

10-12 Banana Peppers
4 oz Cream Cheese
8 oz Shredded Mozzarella Cheese (reserve 6oz for last step)
2 oz Grated Parmesan Cheese
6 oz Your Favorite Cannizzaro Sauce
1 Loaf Italian Bread or Baguette
3 oz Browned Ground Beef or Ground Sausage (optional)

Trim the tops off of the banana peppers and slice a small section lengthwise off to create a boat.  Remove seeds and ribs.  Leave as much of the pepper as you can but still leave yourself room to de-seed and stuff.

In a small bowl, cream together the 3 cheeses (just 2 oz of the mozzarella) with a dash of salt and pepper (and meat if using).  Using a small butter or cheese knife, stuff peppers and put on sprayed, foil lined cookie sheet.  Bake at 350 degrees for 30 minutes.

Slice bread open lengthwise but don’t cut all the way through.  Cut in sandwich size pieces.  Toast while peppers are in the oven.  Sprinkle Mozzarella cheese on bread, placed 1-2 peppers on each piece, cover with your favorite Cannizzaro Sauce and top with more cheese.  Put back in the oven for 5 minutes longer to melt the cheese and enjoy!
