Stuffed Banana Peppers – Entree

10-12 Banana Peppers
4 oz Cream Cheese
6 oz Shredded Mozzarella Cheese (reserve 4 oz for topping
4 oz Grated Parmesan Cheese (reserve 2 oz for topping)
8 oz Your Favorite Cannizzaro Sauce
3 oz Browned Ground Beef or Ground Sausage (optional)

Trim the tops off of the banana peppers and slice a small section lengthwise off to create a boat.  Remove seeds and ribs.  Leave as much of the pepper as you can but still leave yourself room to de-seed and stuff.

In a small bowl, cream together the 3 cheeses (cream cheese, 2 oz mozzarella & 2 oz parmesan) with a dash of salt and pepper (and meat if using).  Prepare a small lasagna pan by spraying and pouring a layer of your favorite Cannizzaro Sauce.  Using a small butter or cheese knife, stuff peppers and place on sauce in pan.  When finished, top each pepper with a little dollop of sauce and cover with mozzarella cheese.  Bake at 40o for 15 minutes or until hot and bubbly
