Spaghetti IN A Meatball (see what we did there? :))
Serves 6
1 Box Spaghetti – cooked al dente
1 16-20 Oz Package Ground Beef OR a Mixture of Beef & Sausage or Pork OR Ground Turkey
1 Cup Bread Crumbs (Make Your Own Healthier Version! Pulse Leftover Whole Wheat Bread In Your Food Processor!)
½ Cup Shredded Parmesan
1 Tbls Dried or Fresh Parsley
3 Tbls Minced Onion
2 tsps Sea Salt & 1 tsp Pepper
1 Beaten Egg
1 Cup Shredded Mozzarella Cheese
1 Jar Cannizzaro Marinara or Arrabbiata
Using hands, mix first 7 ingredients until just blended.
Toss 1/2 of the cooked spaghetti with 1 cup of your favorite sauce.
Line a medium-size bowl with plastic wrap. Spray wrap with pan spray.
Wet hands and with wet hands, mold the meat mixture around the bowl on all sides.
Sprinkle in mozzarella cheese. Add 1/4-1/2 of the spaghetti. Using the plastic wrap to help, form the meat mixture to seal in the spaghetti.
Line a cookie sheet with foil and spray. Place over the meatball and invert.
Bake at 375 for 30 minutes. Ladle warm sauce over the top and sprinkle with parmesan cheese.
Serve with a little side of the remaining spaghetti and a beautiful side salad!
