Portobello Mushroom Pizza

Serves 4 (or 1 – however many ‘shroom caps you have!)

4 Portobello Mushroom Caps
Salt & Pepper
Extra Virgin Olive Oil – Spray or to Brush
1/2 Cup Mozzarella Cheese
1/4 Cup Shredded Parmesan
1 Jar Cannizzaro Marinara or Arrabbiata
Your Favorite Pizza Toppings (Pepperoni, Sliced Cherry Tomatoes, Sliced Olives, Sauteed Spinach, Diced Onions and/or Peppers, Cooked Sausage, etc.)

Preheat oven to 400 degrees.  Brush (do not use water) your mushroom caps with a dry paper towel to remove any dirt.  Break off the stem and with a spoon, scrape as much of the gills out as you can and discard.
Spray both sides with oil and sprinkle with salt & pepper.  Place on a cookie rack over a pan and bake for 8 minutes.
Dab with a paper towel to remove any moisture and start topping!  Start with sauce (of course), then add all of your favorite toppings.
Bake for another 5-10 minutes or until cheese is melted.
