Lasagna Party Ring

Lasagna Party Ring
Serves 6-8

Just a fun way to eat lasagna AND to share.  Much prettier slices too 🙂

12 Lasagna Noodles
1 Pound Ground Beef (or a combo with Sausage, Ground Pork, etc.)
1 16 Oz Container Ricotta Cheese
1 Cup Shredded Parmesan Cheese
2 Cup Shredded Mozzarella Cheese
1 Beaten Egg
1 12 oz Bag Baby Spinach, Wilted, Squeezed of liquid and Chopped Fine (Optional)
2 Medium Zucchini and/or Yellow Squash, Sliced thin
1 Quart Cannizzaro Marinara, Mushroom Marinara or Arrabbiata

Cook Pasta until just underdone, drain & let cool enough to handle. While pasta is cooking, pan fry beef, crumbling until no longer pink  Add 1/4 Quart of Cannizzaro Marinara, Mushroom Marinara or Arrabbiata and set aside.  Combine & mix well next 5 ingredients – reserving 1.5 Cups of Mozzarella. Spray a bundt ban very well.   Arrange noodles, overlapping from neck to edge and hang excess over the edge.  Sprinkle in 1/2 of the remaining mozzarella as first layer (this will also help bind the noodles).  Layer 1/2 of the meat sauce and then 1/2 of the ricotta cheese mixture.  Layer in squash, then repeat with mozzarella, remaining meat sauce, then remaining ricotta mixture.  Fold excess noodles over last layer  Bake at 375 for 40 minutes or until golden.  Let stand for 30 minutes.  To serve, place a cutting board over the top and carefully invert.  Remove the bundt pan and slice with a sharp knife.  Place a bowl with remaining warmed sauce in the center and let everyone serve themselves!
