1 lb Gnocchi
1 Quart Jar Cannizzaro Vodka Sauce (ALL Cannizzaro Sauces would actually be GREAT in this recipe!)
8 oz shredded mozzarella cheese
8 oz fresh Burrata
4 oz grated Parmigiano Reggiano
1 lb Ground Beef
**Great additions – Zucchini, Spinach, Yellow Squash, Eggplant, Peas – any and all of the above!
Heat oven to broil. Cook pasta according to package directions – about 2-3 minutes or until it floats and strain. Brown ground beef in a cast iron or oven-proof large skillet with salt and pepper to taste (if using). Add in any vegetables to saute with your meat just before the beef is finished browning. Add Vodka Sauce and stir. Fold in Gnocchi and layer shredded mozzarella, pieces of burrata and sprinkle with Parmesan cheese. Broil for 4-6 minutes with the oven door slightly ajar and with your eye on it so it doesn’t burn. You want it to get nice and brown and melty but not to burn.
This can be put together in advance and refrigerated (before baking). Just remove from the refrigerator about 30 minutes before baking and enjoy!
