4 Chicken Breast Cutlets
6 oz Sliced Pepperoni
4 oz shredded, sliced or fresh mozzarella
1 Tbls Parsley
Salt & Pepper
1 Jar Cannizzaro Marinara, Mushroom Marinara or Arrabbiata
1 lb of your favorite Pasta, Cooked
Sautee pepperoni in a large pan, turning until just beginning to crisp. Remove from pan and drain on paper towels. In the same pan, using the pepperoni oil, sautee chicken breasts (seasoned with salt & pepper). Cook about 7 minutes on each side or until almost cooked through and browned. Put the entire jar of sauce in the pan around and on top of the chicken. Top with mozzarella and all of the pepperoni and cover for 3 minutes or until cheese is melted. Garnish with parsley.
Plate Cooked Pasta with Sauce on top. Top with your Chicken Pepperoni!
